There are more boards than just two. You can just grep src/mainboard for "intel" strings or src/northbridge/intel as quick and dirty solution :-D.
Writing from corebooted Kontron 986lcd-m (but core2duo is slow).

which ones? can you tell more about the others? whats the board with best quality-price ratio? any board that has good performance for economic budget?
where to buy? do you recommend new or refurbished?

Why are you considering only Intel boards? coreboot supports plenty of AMD boards which don't contain ME/PSP and don't suffer from Meltdown + some other Intel-only vulnerabilities, for which the performance-crippling patches are required. IMHO, AMD seems to be a wiser choice for a coreboot board, unless you already have some Intel-supported board (so no additional expenses for getting one)

Um, the Asrock E350M1 uses AMD hardware...
There are many more supported Intel-based boards. The board status page has a list of supported boards:

Note that this list is not exhaustive: it does not include variants. These are similar boards which share most of the code. For instance, there are two subfolders inside "src/mainboard/gigabyte/ga-h61m-s2pv/variants/", which are the Gigabyte GA-H61M-S2PV and the GA-H61MA-D3V. Note that the latter does not appear in the board status.
The "latest known good" for many of these boards is not updated. This does not mean that the boards do not work, but rather that nobody bothered to upload a board status update for it.

I don't know which needs you have. I'd suggest taking a look at the supported boards (now that you have a more complete list) and picking the one that would best suit you. Additionally, since most of my boards come out of e-waste heaps, I have no clue about pricing and quality.

flashrom should work fine with most, if not all supported boards. However, some boards restrict internal flashing (flashing from within the board itself), so you might need an external programmer.

where can i get a list of all Intel-based boards supported? which boards people prefer and refer as generic boards that usually work? any preference based on statistics?

is it possible to buy "bare-boards" with only the basic components?

If this ME/PSP thing matters to you, AMD no-PSP usually have a better performance than Intel no-ME, but Intel with-ME could have a better performance than AMD no-PSP. It all depends on which boards you are comparing between each other. Try to find out how good is the availability of various coreboot boards to you, then compare their performance.

external flashing is not hard so not sure why you are trying to avoid it.

Check the boards at "Mini-ITX / Micro-ITX / Nano-ITX" category of a page above, and their performance at cpubenchmark website, and try to find them if you're satisfied with their compared performance.

It depends on what you are considering the best: best performance at cpubenchmark or best support (amount of working features, quality of commits, fresh board status, etc.)
which CPU has good performance like the intel I-series?
not all the "intel I-series" CPUs have a good performance, far from that. For example, those "Intel Core" with a U letter at the end, could have a lower power consumption, but their performance is at least one level lower: i7-****U is like a "honest i5", i5-****U is like a "honest i3", and i3-****U is more like Pentium or Celeron. Use some benchmark website for your own judgement.
