I am interested in whether coreboot works with server hardware like PowerEdge servers, Proliant servers, etc. If so, is there a support matrix?

David, DeltaLake and Tiogapass are the 2 most recent Xeon based platforms that have Coreboot support. They are OCP platforms.

There are also ASUS KGPE-D16 server with two AMD Opterons (up to 16 core each) and up to 192 GB RAM - it also doesn't have Intel ME or AMD PSP. Although it has been dropped from coreboot, so you'll have to install a slightly older version of it
