Don't believe everything you read in whitepapers and sales brochures. Passwords and/or encryption have nothing to do with protecting flash contents. Chances are you'll want to work with the write-protect pin on the chip, and its write-protect registers. Have a look at what google did for the chromebooks. That's a pretty solid mechanism
