Documentation: Update acronyms list

- Wrap long lines.
- Add periods.
- Fix alphabetical ordering for a few acronyms.
- Replace any en-dashes with a hyphen.
- Add a few new acronyms.
- Add a number of definitions (mostly U to Z)
