I've set up a proof of concept here: https://review.coreboot.org/c/coreboot/+/87231

It was actually quite easy to get running, and it works quite nicely. It only runs natively with OS packages though; the way the doc.coreboot.org container is set up makes it a bit tricky to get Doxygen to run. I'd have to do a bit more experimentation.
